Welcome to Inside the Box!

Inside the Box is our blog/newsletter for Frisk Fra Boksen or Fresh From the Box.

Why box?

The box is our hydroponic farm in a purpose built refrigerated shipping container. It isn’t really refrigerated but the R29 insulation all the way around makes for a perfect environment for growing green leafy, small root vegetables and herbs year round. We don’t have to worry about hail damaging the crop or an early or late snowfall. We use less water than either a soil based farm or the large warehouse hydroponic farms. We have a smaller carbon footprint than either of those methods as well. And we are hyper-local. Our delivery area is not weeks or days but hours.

We truly are “fresh from the box” because our harvests are within 24 hours of delivery. Most of our lettuces “live head” which means they come with the grow plug (roots) still attached. Their growth slows down once we harvest them but keeping the grow plug on means they stay fresh for 2 to 3 weeks in a refrigerator.

Our cut leaf products such as Kale, Chard, and Arugula, are bagged (recyclable) or provided in compostable plastic containers that maintain freshness for 2 to 3 weeks when refrigerated.

Our Genovese Basil and Sweet Thai Basil are provided in compostable plastic containers that maintain freshness for 2 to 3 weeks. (Remember don’t refrigerate basils. The “fresh” basil most often seen in local grocery stores in many cases is already 2 weeks old and has been “cooled.” If you’re ever wondering why that kind of basil turns gray and then black it is old and has been cooled.

Over time we will share news from inside the box. New crops. Recipes. Connections with local online farmers markets, restaurants and customer reviews.
